TWIN® Cermax M66 fulfills every knife lovers' dream. Special MicroCarbide Powder Steel ensures that the blade is as sharp as a scalpel and exceptionally hard. The ergonomic handle is made from the latest, state-of-the-art technology and materials in cooperation with top Japanese Iron Chef, Rokusaburo Michiba.

The Henckels Cermax knife outer blade is made of high corrosion resistant steel, so it won’t rust or dull with normal use and proper care. The inner blade is made from the special Henckels M66 MicroCarbide powder steel, which increases the strength and edge-retention of the knife.
The special M66 steel in the Henckels Twin Cermax knives is atomized into a micro powder, which is compacted with high pressure to make this hard, tough steel. This process creates a denser steel that has greater edge retention than many other kitchen knives. When the blade is finished, every Twin Cermax knife is hand-honed to a razor-like edge.
Henckels Twin Cermax knives also feature Micarta handles, which have the look and feel of wood with the flexibility and durability of a polymer. The Micarta handle is triple riveted to the tang for added stability. The metal end caps round out the knife for additional balance and comfort.
